85% Sauvignon Blanc
Grapes are hand-selected in the vineyard 24 hours before harvest
Harvested and de-stemmed in the vineyard during the cool morning hours (5-8am)
Cold skin maceration (4hrs for Sémillon, 24hrs for Sauvignon)
Fermentation in temperature-controlled stainless-steel tanks.
Aged on fine lees for several months with regular stirring
Situated in the Castelviel and Gornac communes, in heart of the large Entre-deux-Mers between the Garonne and Dordogne Rivers lies Château Haut Dambert. The Hitier-Buffeteau family has been running this estate for three generation. Currently, Jean-Luc Buffeteau is the head oenologist at Chateau Haut Dambert.
