Hand-harvested grapes are done parcel by parcel.

 

WINEMAKING

100% Malolactic fermentation. First for 10 days then second for six weeks. 36 months sur lattes and on lees.

Cuvée Ernestine Brut is an exceptional champagne that is produced only when the harvest is of such good quality that Veuve Doussot declares the harvest a “vintage.” Powerful and persistent, this cuvée is an ideal blend of 70% Pinot Noir and 30% Chardonnay. A wonderful nose reveals bursts of white flowers and stone fruit, the palate becomes a focus for flavors such as pear, apricot with a hint of honey. Supple yet mouth-filling, it holds strong all the way through the long finish. The fine mousse is long and pleasing to the eye.
